  Two tables. One house. South Miami. 

Some collaborations start with a plan. Ours started with a conversation between two people who understood each other immediately - because they'd each built the same hard, beautiful thing, just in different corners of Miami. 

Clásica Victoria has spent mornings and afternoons in South Miami since 2022, built on a story that began decades earlier and an ocean away. In 1996, Victoria Galindez opened the doors of Clásica Victoria in Buenos Aires, continuing a family tradition her grandmother had started. She trained between Buenos Aires, Paris, and Vienna, and built a kitchen that carries all three cities in it: classic European pâtisserie, French and Italian and Austrian technique, folded into the warmth of Argentine home cooking. Her closeness to every client she's ever served - first through catering, then through the doors of her own café - is what's grown into the loyal community South Miami knows today: a place where regulars don't order, they just say "the usual." 

Babette has spent its evenings in Coral Gables since 2024 - a love story before it was ever a restaurant. Chef Dani Chávez-Bello and Alex Oliveros found each other after decades apart, and built Babette the way they've built everything since: together. His side carries over two decades of Michelin-level craft - El Bulli, Bouley in New York, kitchens across Europe and Asia - food that's unmistakably his: precise, generous, never heavier than it needs to be. Hers is the eye that shaped the room around it: the identity, the interiors, the warmth that makes strangers feel like they've been welcomed home. Neither half stands alone. It's why Babette also lives beyond its own four walls, through private events and catering the two of them run hand in hand. Babette isn't Dani's restaurant with Alex's design on top - it's one home, built by two people who happen to be partners in every sense of the word. 

Two different stories, one shared journey: building something real, table by table, and never losing the passion that started it all. 

Starting Friday, September 4th, Babette begins a new chapter in South Miami. 

By day, Clásica Victoria continues exactly as it always has - the same delicious menu, the same warm service South Miami already loves. 

By night, Tuesday through Saturday from 6pm, the room transforms - and Babette takes over. A new ambiance sets in, our own signature down to the last detail, and Chef Dani's kitchen goes to work with the same technique and standards guests already love in Coral Gables - Babette, reimagined for an evening in South Miami.
